With all this nice weather we've been having, my roommates and I have been doing a lot of grilling. Unfortunately it's really making a dent in our wallets since steak and burgers can get pretty expensive. Thankfully I found a recipe for steak kabobs that won't cost you too much and still tastes great. It also makes 8 servings so it's a great recipe if you enjoy having leftovers.

Flank Steak With Vegetable Skewers

Ingredients

Spice Rub of your choice (optional)

2lb beef flank steak cut into 1-1/2 inch pieces

8 button mushrooms

8 cherry tomatoes

1 small zucchini cut into 3/4 inch pieces

1 small onion cut into wedges

1 small red sweet pepper cut into 1 inch pieces

2 Tbsp. olive oil

Salt and ground black pepper

BBQ sauce

Directions

1.
In a bowl, combine Spice Rub and steak pieces. On eight long metal skewers, alternately thread steak, mushrooms, tomatoes, zucchini, onion, and sweet pepper.

Brush mushrooms and vegetables with olive oil and sprinkle with salt and pepper. Grill until desired doneness.
3.
Serve meat and vegetables with BBQ Sauce. Makes 8 servings.
